Sugar Beans

750 ml (3 cups) water, for soaking
250 ml (1 cup) Pride red speckled beans
750 ml (3 cups) boiling water, plus water for topping up

  • Cover beans in water and soak overnight.
  • Drain soaking water. Add beans to pot and cover with boiling water. Simmer for 1 hour or until soft. Stir occasionally while cooking. Keep beans covered in water, so add more boiling water if needed. Once beans are soft and cooked through, drain remaining water.

Try this quick soaking method: To cover beans with water, add 750 ml (3 cups) of water for every 250 ml (1 cup) of beans. Boil for 5 minutes. Cover and soak for 1 hour.

Serve with tomato bredie or for a tasty meat-free meal packed with protein.
