1 litre (4 cups) water
2.5 ml salt
250 ml (1 cup) Pride Polenta
- In a heavy-based pot, bring water and salt to a boil. Slowly add polenta into water while whisking to prevent lumps.
- Simmer on low heat for 5 minutes while whisking, until polenta starts to thicken. Cover and cook for about 30 minutes. Stir regularly with a wooden spoon to ensure that polenta remains smooth.
- Polenta is done when texture is creamy and the individual grains are tender.
For extra flavour, use chicken stock instead of water. Stir 3 tablespoons butter and 1/2 cup freshly grated hard cheese into hot polenta for a traditionally Italian take.
Serve alongside any kind of meat stew. The perfect accompaniment to a vegetable ragout.
