Coarse Mabele (Sorghum) Porridge

Coarse Mabele

500ml (2 cups) water, for boiling
Salt, to taste
250 ml (1 cups) cold water
250 ml (1 cups) Tops Coarse Mabele

  • Bring water to a boil. Add salt.
  • In a separate bowl, mix cold water and mabele. Add to boiling water while stirring to prevent clumps.
  • Bring back to a boil, stirring frequently as the mixture thickens. Reduce heat, cover and simmer for 25-30 minutes, stirring every 5 minutes, until cooked or desired consistency is reached.

Variation:
To cook in the microwave, mix 250ml (1 cup) Tops Mabele and 250ml (1 cup) cold water together in a microwave-safe bowl. Add a pinch of salt. Add 500ml (2 cups) boiling water while stirring continuously. Microwave on High at 100% power until cooked. Estimated 5-7 minutes for a runnier consistency (suitable for breakfast) or 8-9 minutes for a thicker consistency (suitable for supper). Stir the mixture well after the first 1 ½ minutes of cooking to reduce lumps and thereafter stir another 2-3 times while cooking.

Serving Suggestion:
Serving suggestions: For breakfast, serve with milk/butter and sugar to taste. For supper, serve with beef stew.
